The only thing I like about winter is an excuse to find different ways to cook oatmeal ( oh! maybe hot chocolate) . This recipe has dates and bananas for sweetness, a quick zest of nutmeg for warmth and berries for freshness burst of fruitiness.
Ingredients
1/2 cup old fashioned oatmeal
4 cups water
1 large banana, 2 if they are smaller in size
3 Medjool dates , pitted and chopped
A pinch of nutmeg
1 cup of frozen berries thawed
1Tbp chopped nuts or nut butter
1Tbsp Coconut flakes or any seeds
Maple syrup ( optional)
1 pinch of kosher or any flaky salt.
Bring 1/2 cup of oats and 4 cups of water to boil. Simmer for 10mins ,until oats soften a bit. Add chopped bananas and dates and cook it for another 5 to 8 minutes until the banana and dates are almost disintegrated into the dish. Grate about a pinch of nutmeg into the dish.
Combine well, serve them in 2 bowls and a pinch of coarse salt. Top them with 1/2 cup of thawed berries, any chopped nuts or a spoon of nut butter. This is the right amount of sweetness for my family but drizzle some maple syrup if you like a little more sweet. Adding a splash of milk or cream also enhances the taste of the dish.
