Potato and leak soup with thyme




Potato and leak soup loaded with thyme and a touch of cream. I have fallen in love with Thyme this year. We grew a few varieties and lemon thyme goes really well with lots of dishes I cook. It has the spicy fragrance like ajwain or cumin. A good sub for thyme is Cuban oregano or dodda patre in Kannada .


Recipe

1 Tbsp olive oil

1 cup of chopped leeks

1/2 cup chopped white onions

2 cloves of garlic

3 cups of chopped potatoes

2 Tbsp of fresh thyme

3 to 4 cups of water

Salt to taste

Few cracks of black pepper

1/4 coconut cream or dairy cream


Take a medium soup pot.

Sauté onions , garlic, leeks in olive oil for few minutes.

Add half of thyme to release the oils and infuse leeks.

Add potatoes and sauté then for 3 minutes.

Add salt , 3 cups of water or stock and close the lid of your soup pot. After about 10 minutes , the potatoes will be soft.

Add the remaining thyme for fresh burst of peppery taste and use an immersion blender to blend until smooth.

Check for seasoning and add water to the consistency you desire. Bring it boil one more time .

Serve this fragrant soup in a bowl and drizzle your choice of cream .

I almost think cream is one of the key ingredients to cut through the spicy thyme.

Enjoy with crusty warm bread for lovely meal this winter .
